How does the UP Program work Candidate olive oils must provide a sample and agree to have the sample analyzed by an independent laboratory. The oils are tested to ensure that they meet or exceed the verifiable standards of the UP Program. Prior to purchasing an extra virgin olive oil for distribution, Veronica Foods Company requests a sample from the olive oil producer. The sample is sent to an independent lab where both a sensory and chemical analysis are performed to ensure that the oil meets or exceeds our exclusive UP (Ultra-Premium) standard.
Another serious problem with olive oil that is mislabeled has to do with adulteration. Often, big name brands will add another, typically lesser-grade oil to their olive oil so they can get more out of their harvest and the consumer will never know the difference. Unfortunately, olive oil is often adulterated with canola oil, which has no health benefits at all, but can also be mixed with oils like hazelnut or soybean, which can be particularly harmful to those with allergies to those foods. And whenever the olive oil is adulterated with a lower grade oil, consumers are not getting any of those health benefits they think/assume they are getting.
Those containers hold large amounts of olive oil from all over the world! Once they get shipped to Oakland, they get transferred to these massive containers where they are stored with inert gas (I believe they use nitrogen) to keep the oil from oxidizing. Then the oil gets pumped out into smaller containers that are shipped to restaurants and retail stores across the US.
